Zesty Orange Sunshine Cake Recipe

Ingredients:

  • For the Cake:
    • 2 1/2 cups all-purpose flour  
    • 1 1/2 cups granulated sugar
    • 3 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup (2 sticks) unsalted butter, softened
    • 4 large eggs
    • 1 cup fresh orange juice
    • 2 tablespoons orange zest (from about 2 large oranges)
    • 1/2 cup milk or buttermilk
    • 1 teaspoon vanilla extract.
  • For the Orange Glaze (Optional):
    • 1 cup powdered sugar
    • 3-4 tablespoons fresh orange juice
    • 1 teaspoon orange zest.

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×13 inch baking pan or two 9-inch round cake pans.
  2. Combine Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar:
    • In a separate large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add Eggs:

    • If the glaze is too thick add more orange juice, if it is to thin add more powdered sugar.
  10. Glaze the Cake (Optional):
    • Once the cake has cooled completely, drizzle the orange glaze over the top.
