Veggie Chili Cooked Quickly in the Instant Pot

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced

  • 1 carrot, diced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 1 cup vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Sauté the Veggies:
    Set the Instant Pot to “Sauté” mode. Add olive oil, then sauté the diced onion, garlic, and bell peppers for 3-4 minutes until softened.
  2. Add Remaining Vegetables:
    Stir in the diced zucchini and carrot, and sauté for an additional 2-3 minutes.
  3. Add Beans, Corn, and Tomatoes:
