Vanilla Pudding Poppers

Ingredients

  • 1 package (3.4 oz) vanilla instant pudding mix
  • 2 cups cold milk
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1 pack mini graham crackers, crushed (optional)
  • Sprinkles or chocolate shavings (optional for garnish)

Instructions

  1. In a medium mixing bowl, whisk together the vanilla instant pudding mix and cold milk until it begins to thicken, about 2 minutes.
  2. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form, around 3-4 minutes.
  3. Gently fold the whipped cream into the pudding mixture until well combined and smooth.
  4. If desired, fold in crushed graham crackers for an added crunch.
  5. Spoon the pudding mixture into small silicone molds or serving cups, smoothing the top with a spatula.
  6. Freeze for at least 3-4 hours, or until firm.
  7. Once frozen, carefully pop the pudding out of the molds or cups.
  8. Garnish with sprinkles or chocolate shavings if desired before serving.
