- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour

- 1 cup caramel sauce (store-bought or homemade)
- 1 cup chocolate chips (milk or dark)
- 1 tbsp vegetable oil (optional, for chocolate melting)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- Prepare the Cookie Dough: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes. Add the egg and vanilla extract and mix until combined.
- Add Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until fully incorporated.
- Shape the Cookies: Scoop out about 1 tablespoon of dough and roll it into a ball. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a spoon or your fingers.
- Bake: Bake in the preheated oven for 8-10 minutes or until the edges of the cookies are golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
- Caramel Filling: Once the cookies are fully cooled, spoon a small amount of caramel sauce onto the center of each cookie. You can either use store-bought caramel sauce or make your own by gently heating sugar until it melts and thickens into a smooth caramel.
- Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips and vegetable oil (if using) in 30-second intervals, stirring in between until smooth.
- Top with Chocolate: Spoon or drizzle the melted chocolate over the caramel-filled cookies, spreading it evenly to cover. Let the chocolate set for a few minutes at room temperature or place the cookies in the refrigerator to speed up the process.
