Throw-Together Mexican Casserole

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 (10 oz) can diced tomatoes with green chiles (e.g., Rotel)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 1 (10 oz) bag tortilla chips, lightly crushed
  • Optional toppings: sour cream, sliced green onions, jalapeños, chopped cilantro

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef and diced onion over medium heat until beef is browned; drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, black beans, corn, and salsa. Let simmer for 5 minutes.
  4. In a greased 9×13-inch baking dish, spread half the crushed tortilla chips on the bottom.
  5. Layer half the meat mixture over the chips, then sprinkle 1 cup of cheese on top.
  6. Repeat layers: remaining chips, meat mixture, and finish with the remaining cheese.
  7. Cover with foil and bake for 20 minutes. Uncover and bake an additional 5–10 minutes until cheese is melted and bubbly.
  8. Let cool slightly. Top with sour cream, green onions, or any favorite toppings.
