Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 packet taco seasoning
- 1 (10 oz) can diced tomatoes with green chiles (e.g., Rotel)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 cup salsa
- 2 cups shredded Mexican cheese blend
- 1 (10 oz) bag tortilla chips, lightly crushed
- Optional toppings: sour cream, sliced green onions, jalapeños, chopped cilantro
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef and diced onion over medium heat until beef is browned; drain excess fat.
- Stir in taco seasoning, diced tomatoes, black beans, corn, and salsa. Let simmer for 5 minutes.
- In a greased 9×13-inch baking dish, spread half the crushed tortilla chips on the bottom.
- Layer half the meat mixture over the chips, then sprinkle 1 cup of cheese on top.
- Repeat layers: remaining chips, meat mixture, and finish with the remaining cheese.
- Cover with foil and bake for 20 minutes. Uncover and bake an additional 5–10 minutes until cheese is melted and bubbly.
- Let cool slightly. Top with sour cream, green onions, or any favorite toppings.
