Super Easy Rice Cake (or Milk Custard Cake)


Ingredients

  • 1 cup rice flour
  • 1/2 cup sugar
  • 2 cups milk (or coconut milk for extra flavor)
  • 2 eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
  2. In a large mixing bowl, whisk together the rice flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs, then mix in the milk, melted butter, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until you get a smooth batter.
  5. Pour the batter into the prepared baking dish and bake for 40-45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
