Strawberry Tres Leches Cake Recipe

This decadent dessert combines the moistness of tres leches cake with the sweet tang of strawberries. The cake is soaked in a mixture of evaporated milk, condensed milk, and heavy cream, making it incredibly rich and flavorful.

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar  
  • 4 large egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk

For the Tres Leches Mixture:

  • 1 can (14 ounces) evaporated milk
  • 1 can (14 ounces) sweetened condensed milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

For the Strawberry Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare the cake batter: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg whites one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.  
  3. Bake the cake: Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.  
  4. Make the tres leches mixture: In a large bowl, whisk together the evaporated milk, condensed milk, heavy cream, and vanilla extract until smooth.
  5. Soak the cake: Once the cake is completely cool, poke holes all over the top of the cake with a fork. Pour the tres leches mixture evenly over the cake, making sure it soaks into the holes.
  6. Prepare the strawberry topping: In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss to coat the strawberries evenly.
  7. Serve: Top the soaked cake with the strawberry topping and serve immediately. Enjoy!
