A flavorful and easy side dish featuring tender potatoes and zucchini, seasoned with herbs and spices. Perfect for a quick weeknight meal.
Ingredients:
- 2 medium potatoes, diced (about 1-inch cubes)
- 2 medium zucchini, diced (about 1-inch cubes)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions:
- Prepare the Vegetables: Wash and dice the potatoes and zucchini into similar-sized cubes. Chop the onion and mince the garlic.
- Sauté the Onions and Potatoes: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the diced potatoes and cook, stirring occasionally, until they start to brown and soften, about 10-15 minutes.
- Add the Zucchini and Garlic: Add the diced zucchini, minced garlic, dried oregano, dried thyme, and red pepper flakes (if using) to the skillet. Season with salt and black pepper.
- Cook Until Tender: Continue to cook, stirring occasionally, until the zucchini and potatoes are tender and cooked through, about 8-10 minutes. Adjust seasoning as needed.
- Garnish and Serve: Remove from heat and garnish with fresh parsley or chives. Serve hot as a side dish.
Optional additions:
- A squeeze of lemon juice at the end for brightness.
- Grated Parmesan cheese sprinkled over the top.
