Sautéed Potatoes and Zucchini Recipe

A flavorful and easy side dish featuring tender potatoes and zucchini, seasoned with herbs and spices. Perfect for a quick weeknight meal.

Ingredients:

  • 2 medium potatoes, diced (about 1-inch cubes)
  • 2 medium zucchini, diced (about 1-inch cubes)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley or chives, chopped (for garnish)

Instructions:

  1. Prepare the Vegetables: Wash and dice the potatoes and zucchini into similar-sized cubes. Chop the onion and mince the garlic.
  2. Sauté the Onions and Potatoes: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the diced potatoes and cook, stirring occasionally, until they start to brown and soften, about 10-15 minutes.
