Ingredients
For the Cake:
- 1 cup (225g) unsalted butter, softened
- 1½ cups (300g) granulated sugar
- 4 large eggs, room temperature
- 2 tsp vanilla extract
- 2½ cups (315g) all-purpose flour
- 2½ tsp baking powder
- ½ tsp salt
- 1 cup (240ml) whole milk, room temperature
- Optional: zest of 1 lemon or orange for extra fragrance
For the Glaze (Optional but Delicious):
- 1 cup (120g) powdered sugar
- 2–3 tbsp milk or lemon juice
- ½ tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round or bundt cake pan.
- In a large mixing bowl, cream the softened butter and sugar together using an electric mixer until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract (and citrus zest if using).
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined—do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
- If glazing: In a small bowl, whisk together powdered sugar, vanilla, and milk or lemon juice until smooth. Drizzle over the cooled cake.
