Ingredients
- 1 cucumber, thinly sliced
- 2 carrots, julienned
- 1 red bell pepper, sliced into thin strips
- 1 yellow bell pepper, sliced into thin strips
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup radishes, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the cucumber, carrots, bell peppers, cherry tomatoes, red onion, radishes, and parsley.
