- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for dusting)
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans or walnuts
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Stir in the vanilla extract.
- Gradually add the flour and salt, mixing until combined. Fold in the finely chopped nuts.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, about 1 inch apart.
- Bake for 12-15 minutes, or until the edges are just beginning to turn golden. Remove from the oven and let cool for about 5 minutes.
- While the cookies are still warm, roll them in powdered sugar to coat. Let the cookies cool completely and roll them in powdered sugar once more for an extra dusting.
