Ingredients

Cake:

  • 1 box yellow cake mix (plus ingredients listed on the box)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Pecan Pie Filling:

  • 1 1/2 cups chopped pecans
  • 1/2 cup brown sugar, packed
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1️⃣ Prepare the Cake:

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  • In a large bowl, combine cake mix, melted butter, milk, and vanilla. Mix until smooth.
  • Pour batter evenly into the pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let cakes cool completely.

2️⃣ Make the Pecan Pie Filling:

  • In a saucepan over medium heat, combine brown sugar, corn syrup, butter, eggs, vanilla, and salt. Stir constantly until thickened (about 8-10 minutes).
  • Stir in chopped pecans, then let cool to room temperature.

3️⃣ Prepare the Frosting:

  • Beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.

4️⃣ Assemble the Cake:

  • Place one cake layer on a serving plate. Spread a generous layer of pecan filling on top.
  • Add the second cake layer and spread cream cheese frosting over the top and sides.
  • Drizzle any leftover pecan filling on top and garnish with extra pecans if desired.
