Parmesan Meatloaf

Ingredients

  • 1 ½ lbs ground beef
  • ½ cup grated Parmesan cheese
  • 1 cup breadcrumbs (Italian style preferred)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • ¼ cup ketchup (plus more for topping)
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian herbs (or oregano/basil blend)
  • Optional: ¼ cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine ground beef, Parmesan cheese, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and herbs. Mix until fully combined (use your hands for best results, but don’t overmix).
  3. Shape the mixture into a loaf and place it on the baking sheet, or press into a loaf pan.
  4. Top with ketchup (spread a thin layer over the top for a tangy glaze).
  5. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Let it rest for 10 minutes before slicing to allow the juices to redistribute.
  7. Serve warm, optionally garnished with extra Parmesan or parsley.
