Parmesan Meatloaf recipe

Ingredients

  • 1 ½ pounds ground beef
  • ½ pound ground pork (optional for extra flavor)
  • 1 cup Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • ¼ cup chopped fresh parsley (or 1 tbsp dried)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian seasoning
  • 1 cup marinara or pasta sauce (plus extra for topping)
  • Extra Parmesan for topping

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
  2. In a large bowl, combine ground beef, ground pork (if using), breadcrumbs, Parmesan, onion, garlic, eggs, milk, parsley, salt, pepper, Italian seasoning, and 1 cup marinara sauce.
  3. Mix gently with your hands until just combined. Do not overmix to keep it tender.
  4. Shape the mixture into a loaf and place in the prepared pan.
  5. Spread extra marinara sauce over the top and sprinkle with more Parmesan cheese.
  6. Bake uncovered for 55–65 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing.
  8. Serve with mashed potatoes, roasted veggies, or a fresh salad.
