Orange Cake: Moist Without Milk or Flour, It’s Perfect

Ingredients

  • 2 large oranges (preferably seedless)
  • 3 large eggs
  • 1 cup (200g) granulated sugar
  • 2 ½ cups (250g) almond flour (or finely ground almonds)
  • 1 ½ tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
  2. Prepare the oranges:
    Wash the oranges well and place them (with peel) in a pot of water. Boil for about 30 minutes to soften. Drain, cool slightly, then cut into chunks and remove any seeds.
  3. Blend the oranges:
    Place the boiled orange chunks (including peel) in a food processor and blend until smooth.
  4. Make the batter:
    In a large bowl, whisk together eggs and sugar until light and fluffy. Add the blended orange, almond flour, baking powder, and salt. Mix until fully combined.
  5. Bake:
    Pour the batter into the prepared cake pan. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if it browns too quickly.
  6. Cool & serve:
    Allow to cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar or drizzle with orange glaze if desired.
