Ingredients
- 3 large eggs
- 2 medium oranges (zest and juice)
- 1 cup granulated sugar
- 2 cups almond flour (finely ground almonds)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract (optional)
- A pinch of salt
Instructions
- Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper. - Prepare the Oranges
Wash the oranges thoroughly. Zest both oranges and set the zest aside. Squeeze out the juice, ensuring you have about 1/2 cup of fresh orange juice. - Mix the Wet Ingredients
In a large mixing bowl, beat the eggs and sugar together until light and fluffy. Add the orange juice, zest, and vanilla extract (if using), and mix well. - Combine Dry Ingredients
In a separate bowl, whisk together the almond flour, baking powder, and salt. - Create the Batter
Gradually add the dry ingredients into the wet mixture. Stir until the batter is smooth and well combined. - Bake the Cake
Pour the batter into the prepared pan. Smooth the top with a spatula. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. - Cool and Serve
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Garnish with powdered sugar or a drizzle of orange glaze, if desired.
