Old-Fashioned Meatloaf recipe

Ingredients

  • 2 lbs ground beef (80/20 for flavor)
  • 1 small onion, finely chopped
  • 1 cup milk
  • 2 large eggs
  • 1 cup breadcrumbs (plain or Italian-style)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ketchup (optional, for added flavor)
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley (optional)

🍅 For the Glaze (optional but classic):

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard or Dijon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, chopped onion, milk, eggs, breadcrumbs, Worcestershire sauce, ketchup (if using), salt, pepper, garlic powder, and parsley.
  3. Mix everything gently with your hands or a spoon until just combined—avoid overmixing for tender meatloaf.
  4. Transfer the mixture to a greased loaf pan or shape it into a loaf on a parchment-lined baking sheet.
  5. In a small bowl, mix together ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
  6. Bake for 55–65 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Let the meatloaf rest for 10 minutes before slicing to retain juices.

✅ Tips:

  • You can add diced bell peppers, shredded carrots, or celery for more veggies.
  • Leftovers make fantastic sandwiches the next day.
