No-Bake Cookie Cake Recipe

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk chocolate chips
  • 1 cup butterscotch chips

Instructions:

  1. Cream the Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the vanilla extract.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.  
  4. Add Chocolate Chips: Stir in the milk chocolate chips and butterscotch chips.
  5. Form the Cookie Dough: Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them apart.
  6. Chill and Bake: Chill the dough in the refrigerator for at least 30 minutes. Preheat your oven to 350°F (175°C). Bake for 10-12 minutes, or until golden brown.
  7. Assemble the Cookie Cake: Once the cookies have cooled completely, arrange them in a circular pattern on a serving plate to form a cake.
  8. Frosting (Optional): For a decadent touch, frost the cookie cake with your favorite frosting or drizzle with melted chocolate.

  • For a richer flavor, use brown butter instead of regular butter.
