Ingredients
- 2 large cucumbers, diced
- 3 large tomatoes, diced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives, pitted and sliced
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped (optional)
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp lemon juice
- 1 tsp dried oregano
- Salt and black pepper, to taste
Instructions
- In a large bowl, combine cucumbers, tomatoes, red onion, olives, feta cheese, parsley, and basil.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for 10-15 minutes to allow the flavors to meld.
