Ingredients
- For the fries:
- 4 large russet potatoes (or 1 bag frozen French fries)
- Vegetable oil (for frying or baking)
- Salt, to taste
- 1 tsp Cajun seasoning
- For the toppings:
- 1 cup shredded cheddar cheese
- ½ cup cooked bacon, crumbled
- ½ cup pickled jalapeño slices
- ¼ cup green onions, chopped
- ¼ cup ranch dressing (or voodoo sauce, see below)
Optional Voodoo Sauce (for extra flavor):
- ½ cup mayo
- 1 tbsp Dijon mustard
- 1 tbsp ketchup
- 2 tsp hot sauce
- 1 tsp Cajun seasoning
- ½ tsp garlic powder
- Mix all and chill before serving.
Instructions
- Prepare the fries:
- If using fresh potatoes: wash, peel, and cut into fries. Soak in cold water for 30 mins, then drain and dry thoroughly.
- Fry in hot oil (350°F/175°C) until golden brown and crispy, or bake/air-fry according to package or preference.
- Season the fries:
- While hot, toss fries with salt and Cajun seasoning.
- Assemble:
- Place fries on a serving plate or tray.
- Sprinkle cheddar cheese over hot fries to melt.
- Add bacon crumbles, jalapeños, and green onions.
- Drizzle:
- Finish with ranch or voodoo sauce drizzled over the top.
- Serve immediately while hot and crispy!
