- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup cold water
- 1/4 teaspoon onion powder (optional, for flavor)
- Vegetable oil (for deep frying)
- Fish fillets or chicken strips (your choice for dipping)
Instructions
- Heat the oil: Preheat vegetable oil in a deep fryer or large heavy pot to 350°F (175°C).
- Mix dry ingredients: In a medium bowl, combine flour, cornstarch, baking soda, baking powder, salt, and onion powder (if using).
- Add water: Gradually whisk in cold water until the batter is smooth. The batter should be slightly thick but not too runny.
- Dip and coat: Pat your fish or chicken dry with paper towels, then dip into the batter to coat evenly.
- Fry to golden perfection: Carefully place the coated fish or chicken into the hot oil. Fry in batches for 3–4 minutes or until golden brown and crispy.
- Drain and serve: Remove with a slotted spoon and drain on paper towels. Serve hot with tartar sauce or your favorite dip.
