Ingredients

  • 3/4 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 3/4 cup cold water (or enough to make a smooth batter)
  • Optional: pinch of paprika or garlic powder for extra flavor

Instructions

  1. In a medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, salt, and sugar.
  2. Gradually add cold water while whisking until you get a smooth, pancake-like batter. It should be thick enough to coat the back of a spoon.
  3. Heat oil in a deep fryer or heavy skillet to 350–375°F (175–190°C).
  4. Dip your fish or chicken into the batter, allowing any excess to drip off.
  5. Carefully place into hot oil and fry until golden brown and crispy, about 3–5 minutes depending on thickness.
  6. Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
