Instructions
- In a medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, salt, and sugar.
- Gradually add cold water while whisking until you get a smooth, pancake-like batter. It should be thick enough to coat the back of a spoon.
- Heat oil in a deep fryer or heavy skillet to 350–375°F (175–190°C).
- Dip your fish or chicken into the batter, allowing any excess to drip off.
- Carefully place into hot oil and fry until golden brown and crispy, about 3–5 minutes depending on thickness.
- Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
