Lemon Truffles Recipe

These delightful lemon truffles are creamy, tangy, and sweet—a perfect bite-sized treat for any occasion. Easy to make with a burst of citrus flavor in every bite!


Ingredients:

  • 1 cup (240ml) heavy cream
  • 8 oz (225g) white chocolate, finely chopped
  • 2 tbsp unsalted butter
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1/4 cup powdered sugar (for coating)
  • Optional: yellow food coloring

Instructions:

  1. Prepare the Ganache:
    In a small saucepan, heat the heavy cream over medium heat until it starts to simmer (do not boil). Remove from heat and pour it over the chopped white chocolate in a heatproof bowl. Let it sit for 2–3 minutes, then stir until smooth.
  2. Add Flavorings:
    Stir in the butter, lemon zest, lemon juice, vanilla extract, and a few drops of yellow food coloring if using. Mix well until fully combined.
  3. Chill the Mixture:
    Cover the bowl with plastic wrap and refrigerate for 2–3 hours, or until the ganache is firm enough to scoop.
  4. Shape the Truffles:
    Use a small cookie scoop or spoon to portion the ganache. Roll each portion into a ball with your hands.
  5. Coat the Truffles:
    Roll the truffles in powdered sugar until fully coated. For an extra touch, you can double-coat them for a thicker sugary layer.
  6. Chill Again:
    Place the coated truffles on a baking sheet lined with parchment paper and refrigerate for 30 minutes to set.
  7. Serve or Store:
    Enjoy immediately, or store in an airtight container in the refrigerator for up to a week.
