Ingredients:
- For the Cake:
- 1 ¾ cups (220g) all-purpose flour
- 2 cups (400g) granulated sugar
- ¾ cup (65g) unsweetened cocoa powder
- 2 tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs, room temperature
- 1 cup (240ml) buttermilk, room temperature
- ½ cup (120ml) vegetable oil
- 2 tsp pure vanilla extract
- 1 cup (240ml) hot water or hot coffee
- For the Ganache:
- 1 cup (170g) semi-sweet chocolate chips or chopped chocolate
- ½ cup (120ml) heavy cream
Instructions:
- Preheat and Prepare Pans:
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- Combine Dry Ingredients:
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add Wet Ingredients:
- Add the eggs, buttermilk, oil, and vanilla to the dry ingredients. Mix until smooth and well combined, but do not overmix.
- Incorporate Hot Liquid:
- Slowly pour in the hot water (or hot coffee for added depth). The batter will be thin and runny, which is what makes this cake incredibly moist.
- Bake:
- Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
- Cool:
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare Ganache:
- Place chocolate chips in a heatproof bowl. Heat the cream in a saucepan over medium heat until it begins to simmer. Pour the hot cream over the chocolate, letting it sit for a minute, then stir until smooth and glossy.
- Assemble:
- Place one cake layer on a serving plate. Spread a thin layer of ganache on top. Add the second cake layer and pour the remaining ganache over the top, letting it drip over the edges for a beautiful finish.
