Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 1/2 cup water
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 1/2 cup heavy whipping cream
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- Powdered sugar (for dusting)
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine butter, water, and sugar. Heat over medium heat until the butter is melted and the mixture begins to simmer.
- Remove from heat and add flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Let the dough cool slightly, then beat in eggs one at a time, mixing well after each addition. Add vanilla extract and stir until smooth.
- Using a spoon or piping bag, drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 25–30 minutes, or until golden brown and puffed. Allow to cool completely.
- In a mixing bowl, whip the heavy cream until stiff peaks form. Gently fold in the mixed berries.
- Slice the pastry balls in half and fill each with the cream and berry mixture. Replace the tops and dust with powdered sugar.
- Serve immediately or refrigerate until ready to serve.
