Ingredients

  • 2 ripe mangoes (peeled and diced, plus more for garnish)
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 package (8 oz) cream cheese, softened
  • 1 pack of Maria cookies (or graham crackers)
  • 1 tsp vanilla extract
  • Juice of 1 lime (optional, enhances mango flavor)
  • Whipped cream (optional, for topping)

Instructions

  1. Make the Mango Cream:
    In a blender, combine the diced mangoes, sweetened condensed milk, evaporated milk, cream cheese, vanilla extract, and lime juice. Blend until smooth and creamy.
  2. Layer the Carlota:
    In a rectangular or square dish, start by spreading a thin layer of mango cream. Add a single layer of Maria cookies on top. Then add another layer of mango cream. Repeat the process, alternating layers, until all the cream is used, finishing with a cream layer on top.
  3. Chill:
    Cover and refrigerate the Carlota for at least 4 hours, or overnight, until the cookies have softened and the dessert is set.
  4. Serve:
    Garnish with mango slices or whipped cream if desired. Slice and enjoy cold!
