Healthy Chicken Pasta Salad with Avocado, Tomato, and Basil Recipe

This refreshing chicken pasta salad combines the creaminess of avocado, the juiciness of tomato, and the freshness of basil for a nutritious and satisfying meal. Perfect for lunch or a light dinner, it’s packed with protein, healthy fats, and vibrant flavors.

Ingredients:

  • 8 oz (225g) whole grain pasta (such as penne or fusilli)
  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a large mixing bowl, combine the cooked and shredded chicken, diced avocado, halved cherry tomatoes, and chopped basil.
