Ingredients:
- 8 oz (225g) whole grain pasta (such as penne or fusilli)
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large mixing bowl, combine the cooked and shredded chicken, diced avocado, halved cherry tomatoes, and chopped basil.
- Add the cooked pasta to the bowl with the chicken and vegetables.
