  • ½ red onion, thinly sliced
  • ¼ cup fresh dill, chopped (optional)
  • ¼ cup white vinegar or rice vinegar
  • 1 tablespoon sugar (adjust to taste)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 1 clove garlic, minced

Instructions

  1. In a bowl, whisk together the vinegar, sugar, olive oil, salt, pepper, and garlic (if using) until the sugar is dissolved.
  2. Add the sliced cucumbers and red onion to a large bowl.
  3. Pour the dressing over the vegetables and toss well to coat.
