Ingredients
- 2 large cucumbers, thinly sliced
- ½ red onion, thinly sliced
- ¼ cup fresh dill, chopped (optional)
- ¼ cup white vinegar or rice vinegar
- 1 tablespoon sugar (adjust to taste)
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: 1 clove garlic, minced
Instructions
- In a bowl, whisk together the vinegar, sugar, olive oil, salt, pepper, and garlic (if using) until the sugar is dissolved.
- Add the sliced cucumbers and red onion to a large bowl.
- Pour the dressing over the vegetables and toss well to coat.
- Let the salad marinate in the fridge for at least 30 minutes to let the flavors meld.
- Before serving, sprinkle with fresh dill (if using) and toss gently.
