Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk (or non-dairy alternative)
- 1 large egg
- 2 tablespoons melted butter (or oil)
- 1 teaspoon vanilla extract
- Optional: Sprinkles, chocolate chips, fruit pieces (for topping or mixing in)

Instructions:
- Prepare the Batter:
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
- If you are adding in any chocolate chips or fruit pieces, gently fold them into the batter now.
- Cook the Bites:
- Preheat a mini muffin pan or a regular muffin pan. If using a regular muffin pan, only fill each section about 1/3 of the way full.
- Lightly grease the muffin pan with butter or cooking spray.
- Pour the pancake batter into each muffin cup, filling them about 2/3 full.
- If adding sprinkles, add them to the top of the batter now.
- Bake at 350°F (175°C) for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean. The time may vary slightly depending on the size of your muffin pan.
