- 1 cup all-purpose flour

- 3/4 cup milk
- 2 tablespoons melted butter

- 1 medium apple, peeled, cored, and finely chopped

Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Stir to combine.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; the batter should be a little lumpy.
- Fold in the chopped apples until evenly distributed throughout the batter.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown and cooked through.
- Remove from the skillet and keep warm while cooking the remaining pancakes.
- Serve warm with syrup, whipped cream, or additional chopped apples if desired.
