Ingredients

  • 1 large egg
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled, cored, and finely chopped
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Stir to combine.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; the batter should be a little lumpy.
  4. Fold in the chopped apples until evenly distributed throughout the batter.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown and cooked through.
