Farmer’s Casserole recipe

Ingredients

  • 3 cups frozen shredded hash brown potatoes, thawed
  • ¾ cup shredded Monterey Jack cheese (or cheddar)
  • 1 cup cooked diced ham (or breakfast sausage)
  • ¼ cup chopped green onions
  • 4 large eggs
  • 1 (12 oz) can evaporated milk
  • ¼ teaspoon black pepper
  • ⅛ teaspoon salt
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 2-quart baking dish with nonstick cooking spray.
  2. Spread thawed hash browns evenly on the bottom of the dish.
  3. Sprinkle shredded cheese, ham, and green onions evenly over the potatoes.
  4. In a medium bowl, whisk together the eggs, evaporated milk, pepper, and salt.
  5. Pour the egg mixture evenly over the layered ingredients in the baking dish.
  6. Bake uncovered for 45–50 minutes or until a knife inserted near the center comes out clean and the top is lightly golden.
  7. Let stand for 5 minutes before serving.
