Ingredients
- 3 cups frozen shredded hash brown potatoes, thawed
- ¾ cup shredded Monterey Jack cheese (or cheddar)
- 1 cup cooked diced ham (or breakfast sausage)
- ¼ cup chopped green onions
- 4 large eggs
- 1 (12 oz) can evaporated milk
- ¼ teaspoon black pepper
- ⅛ teaspoon salt
- Nonstick cooking spray
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 2-quart baking dish with nonstick cooking spray.
- Spread thawed hash browns evenly on the bottom of the dish.
- Sprinkle shredded cheese, ham, and green onions evenly over the potatoes.
- In a medium bowl, whisk together the eggs, evaporated milk, pepper, and salt.
- Pour the egg mixture evenly over the layered ingredients in the baking dish.
- Bake uncovered for 45–50 minutes or until a knife inserted near the center comes out clean and the top is lightly golden.
- Let stand for 5 minutes before serving.
