Chocolate depression cake

Ingredients

  • 1½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ⅓ cup (30g) unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp white or apple cider vinegar
  • 1 tsp vanilla extract
  • 5 tbsp (75ml) vegetable oil
  • 1 cup (240ml) water

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch (or 9×9-inch) baking pan.
  2. In the pan or a mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Make three wells in the dry ingredients. Pour the vinegar in one, vanilla in another, and oil in the third.
  4. Pour the water over everything and mix until just combined. Do not overmix.
  5. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool completely before serving. Optional: dust with powdered sugar or frost with a simple chocolate glaze.
