Fantastic Ferrero Rocher Cake

Ingredients

For the Cake Layers:

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup buttermilk
  • ½ cup hot coffee

For the Hazelnut Filling:

  • ¾ cup Nutella
  • ½ cup chopped roasted hazelnuts

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped

For the Ferrero Rocher Frosting:

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • ½ cup Nutella
  • ½ cup heavy cream
  • ¼ cup finely chopped hazelnuts

For Decoration:

  • 6-8 Ferrero Rocher chocolates, halved
  • Extra chopped hazelnuts
  • Chocolate shavings

Instructions

  1. Prepare the Cake Layers:
    • Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
    • In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
    • In another bowl, beat sugar, brown sugar, and oil until combined. Add eggs and vanilla, mixing well.
    • Alternately add dry ingredients and buttermilk, mixing until smooth. Stir in hot coffee.
    • Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  2. Make the Ganache:
    • Heat heavy cream until steaming (but not boiling), then pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth. Let cool until slightly thickened.
  3. Prepare the Frosting:
    • Beat butter until fluffy. Add powdered sugar gradually, then mix in Nutella and heavy cream until smooth. Stir in finely chopped hazelnuts.
  4. Assemble the Cake:
    • Place one cake layer on a plate. Spread Nutella evenly and sprinkle with chopped hazelnuts.
    • Add the second cake layer and frost the entire cake with Nutella frosting.
  5. Decorate:
    • Pour chocolate ganache over the top, letting it drip down the sides.
    • Garnish with Ferrero Rocher chocolates, extra hazelnuts, and chocolate shavings.
  6. Chill & Serve:
    • Refrigerate for at least 1 hour before slicing. Enjoy!
