Ingredients

  • 2 ripe bananas
  • 2 medium carrots, peeled and chopped
  • 1 apple (optional, for extra sweetness)
  • 1 cup cold water or coconut water
  • Juice of ½ lemon
  • ½ inch piece of fresh ginger (optional)
  • Ice cubes (optional)

Instructions

  1. Wash and peel the carrots. Slice into small pieces.
  2. Peel the bananas and chop them into chunks.
  3. If using, core and chop the apple.
  4. Add the banana, carrot, and optional apple to a blender.
  5. Pour in the water or coconut water.
  6. Squeeze in the lemon juice and add ginger if using.
  7. Blend until smooth and creamy.
  8. Strain the juice through a fine sieve or cheesecloth for a smoother texture, or enjoy as is for all the fiber.
