Ingredients
- 2 large eggs
- 1 ripe avocado, sliced
- 1 medium tomato, sliced
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- Red chili flakes (optional)
- Fresh herbs (parsley or cilantro), for garnish
Instructions
- Boil the Eggs:
- Place eggs in a saucepan and cover with water.
- Bring to a boil, then reduce heat and simmer for 8–10 minutes.
- Remove, cool under cold water, peel, and slice or halve.
- Fry the Tomato:
- Heat half the olive oil in a non-stick pan over medium heat.
- Add tomato slices, sprinkle with a pinch of salt and pepper.
- Sauté for 2–3 minutes per side until slightly caramelized. Remove and set aside.
- Fry the Avocado:
- In the same pan, add the remaining oil.
- Gently place avocado slices in the pan and fry for 1–2 minutes per side.
- Be careful not to overcook—they should remain slightly firm.
- Assemble the Dish:
- On a plate, arrange the boiled eggs, fried tomatoes, and fried avocado.
- Sprinkle with salt, pepper, and chili flakes if using.
- Garnish with fresh herbs and serve warm.
