Eggs with Avocado & Tomato

Ingredients

  • 2 large eggs
  • 1 ripe avocado, sliced
  • 1 medium tomato, sliced
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Red chili flakes (optional)
  • Fresh herbs (parsley or cilantro), for garnish

Instructions

  1. Boil the Eggs:
    • Place eggs in a saucepan and cover with water.
    • Bring to a boil, then reduce heat and simmer for 8–10 minutes.
    • Remove, cool under cold water, peel, and slice or halve.
  2. Fry the Tomato:
    • Heat half the olive oil in a non-stick pan over medium heat.
    • Add tomato slices, sprinkle with a pinch of salt and pepper.
    • Sauté for 2–3 minutes per side until slightly caramelized. Remove and set aside.
  3. Fry the Avocado:
    • In the same pan, add the remaining oil.
    • Gently place avocado slices in the pan and fry for 1–2 minutes per side.
    • Be careful not to overcook—they should remain slightly firm.
  4. Assemble the Dish:
    • On a plate, arrange the boiled eggs, fried tomatoes, and fried avocado.
    • Sprinkle with salt, pepper, and chili flakes if using.
    • Garnish with fresh herbs and serve warm.
