Crispy Mashed Potato Puffs Recipe

These golden, crispy mashed potato puffs are a delightful way to use leftover mashed potatoes. They’re perfect as an appetizer, side dish, or even a snack.

Ingredients:

  • 2 cups cold mashed potatoes (preferably thick and firm)
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour (plus more for coating)
  • 1/4 cup finely chopped fresh parsley (or chives)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil (for frying)  
  • Optional: Breadcrumbs for coating.

Instructions:

  1. Combine Ingredients: In a medium bowl, combine the cold mashed potatoes, egg, Parmesan cheese, flour, parsley (or chives), garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Shape the Puffs:
    • If you wish to use breadcrumbs, prepare a shallow dish with them.
    • Take about 1-2 tablespoons of the mashed potato mixture and shape it into small balls or cylinders.
    • If using breadcrumbs, roll each puff in the breadcrumbs until evenly coated.
    • If not using breadcrumbs, you may lightly dust your hands with flour to prevent sticking while forming the puffs.
  3. Heat the Oil: Pour vegetable oil into a deep frying pan or pot, filling it to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches approximately 350°F (175°C). If you don’t have a thermometer, you can test the oil by dropping a small piece of bread into it; if it sizzles and turns golden brown in about 30-60 seconds, the oil is ready.
  4. Fry the Puffs: Carefully place the mashed potato puffs into the hot oil, a few at a time, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy.
  5. Drain and Serve: Remove the fried puffs from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  6. Serve Hot: Serve the mashed potato puffs immediately while they are still hot and crispy.

Optional additions:

  • Add a pinch of cayenne pepper for a spicy kick.
  • Include finely chopped cooked bacon or ham for added flavor.
  • Serve with your favorite dipping sauce, such as ranch dressing, ketchup, or aioli.
