These golden, crispy mashed potato puffs are a delightful way to use leftover mashed potatoes. They’re perfect as an appetizer, side dish, or even a snack.
Ingredients:
- 2 cups cold mashed potatoes (preferably thick and firm)
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour (plus more for coating)
- 1/4 cup finely chopped fresh parsley (or chives)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil (for frying)
- Optional: Breadcrumbs for coating.
Instructions:
- Combine Ingredients: In a medium bowl, combine the cold mashed potatoes, egg, Parmesan cheese, flour, parsley (or chives), garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Shape the Puffs:
- If you wish to use breadcrumbs, prepare a shallow dish with them.
- Take about 1-2 tablespoons of the mashed potato mixture and shape it into small balls or cylinders.
- If using breadcrumbs, roll each puff in the breadcrumbs until evenly coated.
- If not using breadcrumbs, you may lightly dust your hands with flour to prevent sticking while forming the puffs.
- Heat the Oil: Pour vegetable oil into a deep frying pan or pot, filling it to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches approximately 350°F (175°C). If you don’t have a thermometer, you can test the oil by dropping a small piece of bread into it; if it sizzles and turns golden brown in about 30-60 seconds, the oil is ready.
- Fry the Puffs: Carefully place the mashed potato puffs into the hot oil, a few at a time, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy.
- Drain and Serve: Remove the fried puffs from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Serve Hot: Serve the mashed potato puffs immediately while they are still hot and crispy.
Optional additions:
- Add a pinch of cayenne pepper for a spicy kick.
- Include finely chopped cooked bacon or ham for added flavor.
- Serve with your favorite dipping sauce, such as ranch dressing, ketchup, or aioli.
Enjoy!
