These crispy fried potatoes with onions are a classic comfort food, perfect as a side dish or even a snack. The combination of golden-brown potatoes and caramelized onions is simply irresistible.
Ingredients:
- 2-3 medium-sized potatoes (russet or yellow potatoes work well), peeled and thinly sliced
- 1 large onion, thinly sliced
- 2-3 tablespoons vegetable oil (or any neutral cooking oil)
- Salt, to taste
- Black pepper, to taste
- Optional:
- A pinch of red pepper flakes for heat
- Fresh herbs like parsley or chives for garnish
Instructions:
- Prepare the Potatoes and Onions:
- Peel the potatoes and slice them into thin, even slices (about 1/4 inch thick).
- Peel the onion and slice it into thin slices.
- Heat the Oil:
- Heat the vegetable oil in a large skillet or frying pan over medium-high heat. Make sure the oil is hot enough; you can test it by dropping a small potato slice in—it should sizzle immediately.
- Fry the Potatoes:
- Carefully add the potato slices to the hot oil in a single layer. Avoid overcrowding the pan, as this will prevent the potatoes from browning evenly. You may need to fry them in batches.
- Fry the potatoes until they are golden brown and crispy on one side, then flip them and continue frying until they are crispy on the other side and cooked through.
- Remove the fried potatoes from the pan with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Sprinkle with salt and pepper immediately after removing from the oil.
- Fry the Onions:
- In the same skillet, add the sliced onions. If there is not enough oil remaining add a bit more.
- Fry the onions over medium heat, stirring occasionally, until they are golden brown and caramelized (this will take about 10-15 minutes).
- Add a pinch of salt and pepper to the onions while they are cooking.
- If you would like to add red pepper flakes, add them with the onions.
- Combine and Serve:
- Add the crispy fried potatoes back to the skillet with the caramelized onions.
- Toss gently to combine.
- Taste and adjust seasoning as needed.
- Transfer to a serving plate.
- Garnish with fresh herbs (if desired).
- Serve hot and enjoy!
