This classic sweet corn pudding is a comforting and delicious side dish or dessert. It’s creamy, sweet, and bursting with the flavor of fresh (or frozen) corn.
Ingredients:
- 4 cups fresh or frozen sweet corn kernels (if using frozen, thaw completely)
- 1 cup milk (whole milk or 2% recommended for richness)
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg (optional)
- 4 tablespoons unsalted butter, melted
- Optional: 1 tablespoon cornmeal for added texture.
Instructions:
- Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a 8×8 or 9×9 inch baking dish.
- Blend the Corn: If using fresh corn, cut the kernels off the cobs. Place 2 cups of the corn kernels in a blender or food processor with the milk. Blend until smooth.
- Combine Ingredients: In a large mixing bowl, combine the blended corn mixture, remaining 2 cups of whole corn kernels, heavy cream, sugar, flour (and cornmeal if using), eggs, salt, and nutmeg (if using). Whisk until well combined.
- Add Butter: Stir in the melted butter until evenly distributed.
- Pour and Bake: Pour the corn mixture into the prepared baking dish.
- Bake: Bake for 50-60 minutes, or until the pudding is set and the top is lightly golden brown. A knife inserted into the center should come out clean.
- Cool and Serve: Let the pudding cool for a few minutes before serving. It can be served warm or at room temperature.
Variations:
- Savory Corn Pudding: Reduce the sugar to 2 tablespoons and add chopped onions, bell peppers, or herbs like thyme or chives. You can also add shredded cheese like cheddar or Monterey Jack.
- Spicy Corn Pudding: Add a pinch of cayenne pepper or a few diced jalapeños for a spicy kick.
- Maple Corn Pudding: Replace the granulated sugar with maple syrup for a richer, more complex sweetness.
- Corn and Bacon Pudding: add cooked and crumbled bacon to the batter.
- Corn and Cheese Pudding: add shredded sharp cheddar or pepper jack cheese to the batter.
Tips:
- For a smoother pudding, you can strain the blended corn mixture before adding it to the other ingredients.
- If the top of the pudding is browning too quickly, cover it loosely with aluminum foil.
- If you have a very watery corn, drain some of the liquid before blending.
Enjoy your delicious sweet corn pudding!
