Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar (optional)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil, for cooking

Instructions

  1. In a large bowl, whisk the eggs until well beaten.
  2. Add the cottage cheese and vanilla extract (if using), and mix until combined.
  3. In a separate bowl, combine the flour, sugar, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. The batter will be a bit lumpy because of the cottage cheese.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges look set.
  7. Flip carefully and cook for another 2-3 minutes until golden brown and cooked through.
  8. Remove from heat and keep warm. Repeat with the remaining batter.
  9. Serve warm with your favorite toppings such as syrup, fresh fruit, or yogurt.
