Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 egg
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried herbs (oregano, basil, or thyme)

Instructions

  1. In a mixing bowl, combine cottage cheese, egg, and olive oil. Mix until smooth.
  2. Add flour, baking powder, salt, garlic powder, and dried herbs. Stir until a dough forms.
  3. Knead the dough for about 2-3 minutes until smooth. If the dough is too sticky, add a little more flour.
  4. Divide the dough into small portions and roll each into a flat round shape.
  5. Heat a non-stick skillet over medium heat. Lightly grease with oil.
  6. Cook each flatbread for 2-3 minutes per side until golden brown and cooked through.
  7. Serve warm with butter, dips, or as a sandwich wrap.
