Chicken Parmesan Grilled Cheese Sandwich


A delightful twist on two classics! This Chicken Parmesan Grilled Cheese Sandwich combines the cheesy goodness of grilled cheese with the hearty, flavorful chicken Parmesan. Perfect for lunch, dinner, or anytime you crave something indulgent.


Ingredients

  • For the Chicken:
    • 1 large chicken breast, cooked and shredded (or use pre-cooked chicken)
    • ½ cup marinara sauce
    • ¼ teaspoon garlic powder
    • ¼ teaspoon Italian seasoning
    • Salt and pepper to taste
  • For the Sandwich:
    • 4 slices of bread (sourdough, Italian, or your favorite type)
    • 2 tablespoons butter, softened
    • 1 cup shredded mozzarella cheese
    • ¼ cup grated Parmesan cheese
    • Optional: 4 slices of provolone cheese
    • 1 tablespoon olive oil

Instructions

  1. Prepare the Chicken Filling:
    • In a skillet, heat the marinara sauce over medium heat.
    • Add the shredded chicken, garlic powder, Italian seasoning, salt, and pepper. Stir to combine and heat through. Set aside.
  2. Assemble the Sandwiches:
    • Spread softened butter on one side of each slice of bread.
    • Place the buttered side down on a clean surface.
    • Sprinkle a little mozzarella and Parmesan on each slice.
    • Layer the chicken mixture on two of the bread slices, then top with additional cheese and an optional slice of provolone.
    • Cover with the remaining bread slices, buttered side up.
  3. Cook the Sandwiches:
    • Heat a skillet or griddle over medium heat and add a tablespoon of olive oil.
    • Place the sandwiches in the skillet. Cook for 3–4 minutes on one side, until golden brown and the cheese begins to melt.
    • Flip the sandwiches carefully and cook for another 3–4 minutes until golden and crispy.
  4. Serve:
    • Remove the sandwiches from the skillet and let them cool for a minute before slicing.
    • Serve with a side of marinara sauce for dipping, if desired.
