Chicken Parmesan Grilled Cheese Sandwich

Ingredients

  • 2 slices of thick sandwich bread (sourdough or Italian bread works great)
  • 1 cooked breaded chicken cutlet (or store-bought chicken tenders)
  • 2–3 tablespoons marinara sauce
  • 2–3 slices mozzarella cheese (or shredded mozzarella)
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter, softened
  • 1/2 teaspoon garlic powder (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prepare the bread: Spread softened butter on one side of each bread slice. Sprinkle a little garlic powder onto the butter if using.
  2. Assemble: Lay one slice, butter side down, on a skillet or griddle. Add a layer of mozzarella cheese, then place the cooked chicken cutlet on top. Spoon marinara sauce over the chicken, then sprinkle with grated Parmesan. Top with more mozzarella cheese and the second bread slice (butter side up).
  3. Grill: Heat the skillet over medium heat. Cook the sandwich for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crispy, and the cheese is melted.
  4. Serve: Remove from the skillet, let it rest for a minute, then slice in half. Garnish with fresh basil or parsley if desired. Serve with extra warm marinara for dipping.
