Ingredients

  • 2 cups cooked chicken, finely shredded
  • 2 large potatoes, boiled and mashed
  • 1/2 cup grated cheese (cheddar or mozzarella)
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional, for a little kick)
  • 1 egg
  • 1/2 cup breadcrumbs

For coating:

  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs

For frying:

  • Oil for deep frying

  • In a large bowl, combine mashed potatoes, shredded chicken, cheese, green onions, garlic, paprika, salt, black pepper, and cayenne pepper.
  • Add one egg and breadcrumbs. Mix everything until well combined and the mixture holds together.

  • Take a small amount of the mixture and shape it into small logs or round patties — whichever you prefer!

3️⃣ Coat the croquettes:
