Ingredients
- 2 cups cooked chicken, finely shredded
- 2 large potatoes, boiled and mashed
- 1/2 cup grated cheese (cheddar or mozzarella)
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional, for a little kick)
- 1 egg
- 1/2 cup breadcrumbs
For coating:
- 1/2 cup flour
- 2 eggs, beaten
- 1 cup breadcrumbs
For frying:
- Oil for deep frying
Instructions
1️⃣ Prepare the filling:
- In a large bowl, combine mashed potatoes, shredded chicken, cheese, green onions, garlic, paprika, salt, black pepper, and cayenne pepper.
- Add one egg and breadcrumbs. Mix everything until well combined and the mixture holds together.
2️⃣ Shape the croquettes:
- Take a small amount of the mixture and shape it into small logs or round patties — whichever you prefer!
3️⃣ Coat the croquettes:
- Roll each croquette in flour, then dip it into the beaten eggs, and finally roll it in breadcrumbs. Ensure they’re fully coated for that crispy texture.
4️⃣ Fry to perfection:
- Heat oil in a deep pan to 350°F (175°C). Carefully fry the croquettes in batches until golden brown and crispy — about 2-3 minutes per side.
- Drain on paper towels to remove excess oil.
5️⃣ Serve:
- Enjoy them hot with your favorite dipping sauce — garlic aioli, ketchup, or spicy mayo work wonderfully!
