Cheesy Taco Potatoes

INGREDENT

  • 4 medium russet potatoes, scrubbed and diced
  • 1 tablespoon olive oil
  • 1 lb (450g) ground beef or ground turkey
  • 1 packet taco seasoning (or homemade)
  • 1/4 cup water
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup diced tomatoes or salsa (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes:
    Toss the diced potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet lined with parchment paper.
    Roast for 30–35 minutes, flipping halfway, until golden and crispy.
  3. Cook the Taco Meat:
    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
    Add taco seasoning and water. Simmer for 5–7 minutes until the sauce thickens.
  4. Assemble:
    Once potatoes are roasted, transfer to a serving dish or oven-safe skillet.
    Top with the seasoned taco meat, then sprinkle with shredded cheese.
  5. Melt the Cheese:
    Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    Add a dollop of sour cream, sprinkle with green onions, and add tomatoes or salsa if desired.

Tip: You can also add black beans, jalapeños, or avocado slices for extra flavor.
