Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Potatoes: Toss the diced potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
- Bake Potatoes: Bake for about 25–30 minutes, stirring halfway through, until potatoes are golden and tender.
- Cook Meat: While the potatoes are baking, cook the ground beef in a skillet over medium heat until browned. Drain excess fat, then add taco seasoning according to the packet instructions.
- Combine: Once the potatoes are done, transfer them to a baking dish. Top with the cooked taco meat and sprinkle the shredded cheeses evenly on top.
- Bake Again: Return to the oven for 5–10 minutes, or until the cheese is fully melted and bubbly.
- Garnish & Serve: Remove from oven, sprinkle with diced tomatoes and green onions. Serve warm with a dollop of sour cream.
