  • 4 medium russet potatoes, washed and diced
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese (optional)
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream (for serving)
  • 2 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes: Toss the diced potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  3. Bake Potatoes: Bake for about 25–30 minutes, stirring halfway through, until potatoes are golden and tender.
