Cheesy Cornbread Casserole Recipe

This Cheesy Cornbread Casserole is a comforting and easy-to-make dish that combines the sweetness of cornbread with the savory goodness of cheese. It’s perfect as a side dish for barbecues, potlucks, or family dinners.  

Ingredients:

  • 1 box (8.5 ounces) corn muffin mix (like Jiffy)
  • 1 egg  
  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 cup shredded cheddar cheese (or a blend of your choice)
  • 1 can (15 ounces) cream-style corn
  • 1 can (15 ounces) whole kernel corn, drained
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup chopped jalapeños (optional, for spice)
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Combine Wet Ingredients: In a large bowl, whisk together the egg, milk, and vegetable oil.
  3. Add Corn Muffin Mix: Add the corn muffin mix to the wet ingredients and stir until just combined. Do not overmix.
  4. Add Corn and Cheese: Stir in the cream-style corn, drained whole kernel corn, shredded cheese, green onions (if using), and jalapeños (if using). Season with salt and pepper to taste.
  5. Pour into Baking Dish: Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake: Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
