Ingredients:
- 2 cups granulated sugar
- 1 cup (2 sticks) unsalted butter, cut into cubes
- 1 cup evaporated milk
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 (12-ounce) package semi-sweet chocolate chips
- 1 (7-ounce) jar marshmallow creme
- 1 cup chopped pecans
Instructions:
- Prepare the Pan: Line a 9×13 inch baking dish with parchment paper or aluminum foil, leaving an overhang for easy removal.
- Combine Sugar, Butter, and Milk: In a large, heavy-bottomed saucepan, combine the granulated sugar, butter, evaporated milk, and salt.
- Cook to Soft-Ball Stage: Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a rolling boil. Continue to cook, stirring frequently, until the mixture reaches the soft-ball stage (235-240°F or 112-116°C on a candy thermometer). If you don’t have a candy thermometer, you can test by dropping a small amount of the mixture into a glass of cold water. If it forms a soft ball that flattens when you remove it, it’s ready.
- Remove from Heat: Remove the saucepan from the heat.
- Add Chocolate, Marshmallow Creme, and Vanilla: Immediately add the chocolate chips, marshmallow creme, and vanilla extract. Stir until the chocolate and marshmallow creme are completely melted and the mixture is smooth.
- Stir in Pecans: Stir in the chopped pecans, distributing them evenly throughout the fudge.
