Blueberry Cottage Cheese Breakfast Bake

Ingredients

  • 1 cup cottage cheese (full fat or low fat)
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 cup rolled oats (or oat flour)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 cup fresh or frozen blueberries
  • Optional: zest of 1 lemon for added brightness

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a small baking dish (8×8 inch or similar).
  2. In a large bowl, mix together the cottage cheese, Greek yogurt, eggs, maple syrup, and vanilla extract until smooth. You can also use a blender for an extra creamy texture.
  3. Stir in the oats, cinnamon, baking powder, and salt. Mix until just combined.
  4. Gently fold in the blueberries and lemon zest, if using.
  5. Pour the mixture into the prepared baking dish and smooth the top.
  6. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
  7. Let cool for 10 minutes before slicing. Serve warm or cold.
  8. Optional toppings: extra blueberries, a dollop of yogurt, or a drizzle of honey.
