Ingredients
- 1 cup cottage cheese (full fat or low fat)
- 1/2 cup Greek yogurt (plain or vanilla)
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 cup rolled oats (or oat flour)
- 1/2 tsp baking powder
- Pinch of salt
- 1 cup fresh or frozen blueberries
- Optional: zest of 1 lemon for added brightness
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a small baking dish (8×8 inch or similar).
- In a large bowl, mix together the cottage cheese, Greek yogurt, eggs, maple syrup, and vanilla extract until smooth. You can also use a blender for an extra creamy texture.
- Stir in the oats, cinnamon, baking powder, and salt. Mix until just combined.
- Gently fold in the blueberries and lemon zest, if using.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Let cool for 10 minutes before slicing. Serve warm or cold.
- Optional toppings: extra blueberries, a dollop of yogurt, or a drizzle of honey.
