Ingredients

  • 500g boneless chicken breast (cut into thin strips)
  • 200g mushrooms (sliced)
  • 1 medium onion (sliced)
  • 1 green bell pepper (sliced)
  • 3 cloves garlic (minced)
  • 1-inch ginger (grated)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon black pepper (freshly ground)
  • ½ teaspoon white pepper
  • 1 teaspoon cornstarch (dissolved in 2 tablespoons water)
  • 1 teaspoon sesame oil
  • 2 tablespoons cooking oil
  • ½ teaspoon sugar
  • Salt to taste
  • ½ cup chicken broth
  • Spring onions (for garnish)

Instructions

  1. Heat 1 tablespoon of cooking oil in a large pan or wok over medium-high heat. Add the chicken strips and stir-fry until they turn golden brown and are fully cooked. Remove from the pan and set aside.
  2. In the same pan, add the remaining 1 tablespoon of oil and sauté the minced garlic and grated ginger until fragrant.
  3. Add the sliced onions and cook until they become translucent. Then, add the sliced mushrooms and cook for 2–3 minutes until they soften.
  4. Toss in the green bell peppers and stir-fry for another minute to maintain their crunch.
  5. Return the cooked chicken to the pan and mix well with the vegetables.
  6. Pour in the soy sauce, oyster sauce, chicken broth, and sugar. Stir everything together to coat the chicken and vegetables evenly.
  7. Sprinkle in the black pepper and white pepper, adjusting the spice level to your preference.
  8. Add the cornstarch slurry and stir continuously until the sauce thickens and coats the ingredients well.
  9. Drizzle sesame oil over the dish and give it a final mix before turning off the heat.
  10. Garnish with chopped spring onions and serve hot with steamed rice or noodles.
