Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2-3 medium bananas)
  • 1/2 cup milk or buttermilk
  • 1 cup chocolate chips (semi-sweet or milk chocolate)

Instructions:

  1. Preheat Oven and Prepare Muffin Pan: Preheat your oven to 375°F (190°C). Line a muffin tin with muffin liners or grease it well.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. Cream Butter and Sugar: In a large bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  5. Mash Bananas and Combine: In a separate bowl, mash the ripe bananas with a fork until smooth.
  6. Alternate Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk or buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix.
  7. Fold in Chocolate Chips: Gently fold in the mashed bananas and chocolate chips into the batter.
  8. Fill Muffin Cups: Fill each muffin cup about two-thirds full with the batter.
  9. Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool and Serve: Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Optional: Sprinkle extra chocolate chips on top of the muffins before baking for a more decadent look.
