Bacon Deviled Eggs Recipe

These classic deviled eggs are elevated with crispy bacon and fresh chives, making them a perfect appetizer for parties, potlucks, or holiday gatherings.

Ingredients:

  • 6 large eggs  
  • 1/4 cup mayonnaise  
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar (or white vinegar)  
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons chopped fresh chives
  • Paprika, for garnish (optional)  

Instructions:

  1. Hard-Boil the Eggs: Place the eggs in a saucepan and cover them with cold water by about an inch. Bring the water to a rapid boil over high heat. Remove from heat, cover the saucepan, and let it sit for 10-12 minutes. Transfer the eggs to an ice bath for 5 minutes.  
  2. Peel and Halve the Eggs: Gently peel the eggs and halve them lengthwise.
  3. Remove Yolks and Prepare Filling: Carefully remove the yolks from the egg whites and place them in a medium bowl. Mash the yolks with a fork until smooth. Add the mayonnaise, Dijon mustard, vinegar, salt, and pepper. Mix well until creamy.
  4. Add Bacon and Chives: Stir in the crumbled bacon and chopped chives, reserving a small amount for garnish.
  5. Fill the Egg Whites: Spoon or pipe the yolk mixture into the egg white halves.
  6. Garnish: Sprinkle the deviled eggs with paprika (if using), the reserved crumbled bacon, and chives.
  7. Chill and Serve: Refrigerate for at least 30 minutes before serving.

  • Bacon Cooking: Cook the bacon until crispy and drain it well on paper towels before crumbling.
  • Mayonnaise Alternatives: You can use Greek yogurt or sour cream instead of mayonnaise for a lighter option.  
  • Spice it Up: Add a dash of hot sauce or a pinch of cayenne pepper to the yolk mixture for a spicy kick.
  • Sweet Relish: Add a tablespoon of sweet pickle relish to the yolk mixture for a tangy sweetness.

  • Herbs: Experiment with different herbs like parsley, dill, or tarragon.
  • Avocado: Add mashed avocado to the yolk mixture for a creamy texture and richness.  
  • Make-Ahead: You can prepare the deviled eggs up to 24 hours in advance. Store them in an airtight container in the refrigerator.
